Are onion scapes edible?
Scapes are what happens to a leek, onion, or garlic when they flower. The entire scape (stalk) is edible. They are tender and have a mild onion (or garlic) flavor. Too much cooking of the scape will diminish the flavor.
Can you eat scapes?
Scapes are very versatile and can be used in an assortment of recipes. They can be used anywhere you might otherwise use garlic cloves or scallions. (If using, we would recommend not adding garlic as the flavour can be overwhelming.) They can be sautéed, pureed, roasted and pickled.
Are scapes the same as ramps?
However, ramps and garlic scapes are two different plants and not the same: Garlic scapes are specifically the tops of the garlic bulb, while ramps consist of a whole plant that tastes similar to a cross between leek, onion, and garlic.
